With a constant concern to ensure the satisfaction of its customers, your hostel, Le Ciarus took advantage of the opportunity offered by the renovation work undertaken in 2015 - 2016 to completely overhaul its self-service catering offer. New layout, resigned customer path, modernisation of the furnishings and a brand new presentation concept for starters, main dishes and desserts. To support it in this renewal process, Le Ciarus brought in a famous chef, Laurent Huguet.

Laurent Huguet's contribution at Ciarus hostel 

After spending several years as a Michelin-starred chef first at Le Crocodile and then Le Relais de la Poste, Laurent Huguet decided to share his skills by setting up his own consultancy firm, Laurent Huguet Conseils. An opportunity that Nelly Perrin-Jund - head of Le Ciarus - decided to grasp when the centre was planning to transform its cafeteria. For Nelly Perrin-Jund, it is important that Le Ciarus's offer should stand out as different to the competition. This differentiation is to a large extent built on gustatory and visual innovation in its food offer. Laurent Huguet's advice mainly concerned the aesthetics of the culinary preparations and the management of change with the staff in the Le Ciarus kitchens.
 
Laurent Huguet and Martial Picard, head chef at Le Ciarus hit it off immediately and they quickly settled into an easy collaboration. The project was then developed in consultation with the different managers at Le Ciarus. Laurent Huguet experience and people-oriented approach quickly won over the cooks at Le Ciarus. His credo is to "capitalise on each person's strong points so as to get the best out of the team!". Within just a few weeks, Martial Picard noted with satisfaction that several members of his team had progressed considerably.
 
In the dining room, the change was just as impressive. The number of people eating in the cafeteria quickly rose from about 100 to over 250 every lunchtime. "It's not unusual to now to have more than 300 people," adds Martial Picard.

"When it comes to the cuisine, it's like Haute Couture, we're constantly thinking about the next collection!"

Laurent Huguet's approach also provided an opportunity to put the job of cook back into perspective. The cook has a real creative role to play and must constantly question his or her own work to be able to achieve excellence. Just like fashion, the culinary world is subject to changing trends. For Nelly Perrin-Jund, "above of all it's a state of mind: to keep customers coming back, you have to cultivate a taste for creativity, constantly bring something new, be on the lookout for the latest innovations, open up the range of possibilities".
 
The creative spirit at Le Ciarus applies to more than just the food: every 6 weeks the cafeteria's walls host new exhibitions of paintings or photos by local artists. A scheme that demonstrates the open-minded values of our hostel, that are part of Le Ciarus's DNA !

 

An offer that is distinctive, accessible to all and socially responsible

In these days when keeping down spending is a constant concern, Le Ciarus makes it a point of honour to offers its customers affordable menus:
•    €9.50 incl. VAT for Starter + main dish or Main dish + dessert
•    €11.50 incl. VAT for Starter + main dish + dessert
 
Le Ciarus also aims to take a socially responsible approach: it buys its supplies locally to keep food supply chains short, and dishes are made with seasonal fruit and vegetables.
 
Everything is done to meet every customer's expectations. The cafeteria offers a wide range of dishes: every day you will find meat, fish and vegetarian dishes and very soon summer salads as well. Le Ciarus has also worked very closely with its architect to optimise the customer path to keep waiting times to a minimum, especially at busy times.
 
The cafeteria at Le Ciarus is open every day for breakfast, lunch and dinner !
